Seven Layer Salad

1 head lettuce
1 cup diced celery
4 eggs, hard cooked and sliced
1 10 ounce pkg. frozen peas, uncooked
1/2 cup green pepper, diced
1 sweet onion, med. size, diced
2 cups mayonnaise
2 Tbsp. sugar
4 ounces cheddar cheese, grated
8 slices bacon, fried and broken up
Tear the cleaned crispy lettuce into small pieces (be sure it is very dry).
Spread in 9x13 pan or glass dish.
Layer rest of ingredients in order given (except cheese, bacon, mayonnaise and sugar).
Add sugar to mayonnaise and spread over top as you would frosting.
Top with grated cheese and crumbled bacon. Cover with plastic wrap and
refrigerate for 8-12 hours before serving.

Cookie Salad

2 cups buttermilk
2 pkgs. vanilla instant pudding
8 ounces Cool Whip
1 can Mandarin oranges, drained
1 can crushed pineapple, drained
Mix well and refrigerate for several hours. Right before serving
add 1 package fudge striped cookies broken into pieces.
This makes a very large salad.

Orange Tapioca Salad

1-3oz. package vanilla tapioca pudding (not instant)
1-3 oz. package vanilla pudding (not instant)
1-3oz. package orange jello
Cook with 2 1/2 cups of boiling water until thick, cool completely.
Add
1 cup or more crushed pineapple, drained
1 cup Mandarin oranges, drained
2 cups Cool Whip
Mix together and chill.

Apple Salad

2- 3oz. packages of any red jello
Dissolve in 1 1/2 cups boiling water, then add 1 1/2 cups cold water.
Pour in 9x13 inch glass dish (or about that size). Refrigerate until firm.
Cut firm jello in small squares and cut 2 or 3 red apples in small chunks.
Whip 1 cup (or more, depending how many apples you use) of real whipping cream
until stiff and add sugar to taste.
Gently add cut up jello and apples to whipped cream and serve right away.

Caramel Apple Salad

3 large apples (unpeeled) and diced
10 fun-size Snicker candy bars, cut in small pieces
1 cup milk
1 pkg. instant French vanilla pudding
1 8 oz. container Cool Whip
Mix milk with pudding and beat. Add Cool Whip, cut-up bars and diced apples.

Cucumbers

1 onion, sliced
1 1/2 cup salad dressing
1/2 cup sugar
salt and pepper
4 Tbsp. vinegar (or more if desired)
Mix together and pour over 4 sliced cucumbers.
Chill several hours in the refrigerator. This can easily be cut in half for 2 cucumbers.

Dip for Vegetables

Stir 1 pkg. Knorr Vegetable Soup Mix and 2 cups sour cream until
blended. Cover; chill 2 hours. Stir before serving and serve with
cut up raw vegetables.
